Banana Bread Chia Pudding

Honestly, this could easily be a breakfast if you add some peanut butter and banana, but I’m gonna throw it here cuz I prefer it as a snack :)

Chia pudding is not only full of protein from the yogurt and the chia seeds, but there are healthy fats in the chia seeds and fiber!

I dabble with different chia pudding flavors, but the banana bread is really doin’ it for me these days so lets get cookin’!

This recipe has approximatley 15g of protein per serving.

 

Banana Bread Chia Pudding

Servings: 3

Ingredients

  • 3/4c banana almond milk

  • 1 ¼ cup plain greek yogurt

  • 1tsp vanilla extract

  • pinch sea salt

  • 1/4tsp cinnamon

  • 1T pure maple syrup

  • 1/4c chia seeds

Directions

  1. Grab a large mixing bowl and add to it the banana milk, greek yogurt, vanilla, sea salt, cinnamon, and maple syrup. Whisk until smooth.

  2. Add the chia seeds and whisk to combine.

  3. Allow to sit for about 10 minutes and whisk again (optional, but prevents clumping).

  4. Pour equal amounts of chia pudding into 3 separate containers and store in the fridge over night to allow the chia seeds to absorb the moisture.

  5. When ready to eat, top w/ ½ a sliced banana (optional but personally LOVE) & some pb or chopped walnuts.

  6. Enjoy!
